GRE506 - Mediterranean Diet & Lifestyle in GREECE
This course examines the Mediterranean Diet and the Mediterranean way of life. It is designed to help students develop an understanding about the specific diet and its health benefits, the main ingredients and produce, research the theory of the Mediterranean way of life, and to provide a global perspective via community-based activities. Through cooking workshops and field experiences in the region around Thessaloniki, Greece, this course offers students hands-on experiences in the history, secrets, and makings of Mediterranean cuisine. Students examine the cultural and emotional interconnections that influence what, and how people in the Mediterranean regions eat, and how they socialize with, and around food.

GUA501 - Guatemala OneHealth: Ecology, Culture, Justice
This field-based course consists of expert lectures, visits to community-based organizations, seminars, guided reflections, and written coursework. OneHealth:Ecology, Culture, Justice captures in an Indigenous community near Lake Atitlán, Guatemala, the interconnectedness of people, the environment and animals that we use for food. Topics are examined through a OneHealth lens, which will be expanded and explored through site visits and hands-on service projects with locally-owned/operated Guatemalan farms, cooperatives, and Indigenous community-based agricultural initiatives.
